◆DIRECTOR'S RECOMMENDATION
I blind tasted 180 Sakes as a Sake judge over a weekend in Sydney and this was the only Sake I gave four 4s. The last day when the Sake was revealed I was eager to learn what it is and wanted to taste it again.
It turns out this is a Sake that had breakthrough in Sake brewing and has won a lot of awards, like Kura Master, IWC and Australia Sake Festival multiple times over a few years. This series is by far, the most amazing Sparking Sakes ever.
Secondary fermentation inside the bottle, aged just like Champagne. In fact the 10 year old Japanese Awasake Association gives an individually serial numbered sticker for every bottle. A lot of effort has gone into making every bottle, obviously.
It has nutty nose, sesame oil, roasted grains. The body is flush, let the fine bubbles massage your mouth. The taste is hefty, a lot of going on in the mouse, honey, coffee, toffy, tropical flowers. Lingering after taste.
The yeast is a little pinkish, which gives it a beautiful golden hue. This sake is quite floral and sweet.
Make sure you serve it close to 0 degrees C.
